Curried Prawns in Coconut Mik
Ingredients
- 1 can Coconut Milk
- 2 tablespoons Yellow Curry Paste
- 1 tablespoon Fish Sauce
- 1 & a half teaspoon Salt
- 1 teaspoon Granulated Sugar
- 500g King Prawns (Fresh or Frozen - if fresh make sure to peel and de-tail)
- 225g Cherry Tomatoes
- Juice of half a lime
- 2 Red chillies (cut into strips)
- handful Fresh Coriander leaves (to serve)
Directions
Step 1

Put half the coconut milk into a pan or wok and bring to the boil |
Step 2

Now add the yellow curry paste to the coconut milk and stir in until it disperses fully, then lower the heat and simmer for about 10 minutes. |
Step 3

Add the fish sauce, salt, sugar and remaining coconut milk and simmer again for another 5 minutes. |
Step 4

Now add the prawns and cherry tomatoes and simmer very gently for about 5 minutes and until the prawns are pink and tender |
Step 5
|
Serve the curried prawns immediately on a bed of rice and sprinkle with lime juice and garnish with the chillies and coriander. |
