Leftover Cooked Turkey Curry

Serves 2

Ingredients

  • 1 handful Cooked Turkey (Roughly chopped and/or cubed/shredded)
  • 1 Medium Onion (Chopped)
  • 1 Medium Green Pepper (chopped thickly)
  • Salt and Black Pepper (To Taste)
  • Garam Masala Powder (to taste)
  • 1 teaspoon Sugar
  • 1 tablespoon Brandy
  • carton Single Cream

Directions

Step 1
Head a large frying pan or wok and add a knob of butter
Step 2
Add the onions until slightly soft then add the green pepper till slightly soft
Step 3
Add the turkey and stir and cook through for about 5 mins
Step 4
Then add the curry powder and stir in so that all the ingredients are covered in the curry powder
Step 5
Then add the sugar and salt and pepper to taste
Step 6
Then add the brandy and ignite then add the cream and stir in till cooked through
Step 7
Serve with rice

Ingredients

  • 1 teaspoon Extra Virgin Olive Oil
  • 1 bulb Garlic (Crushed)
  • 1 Large Red Pepper (thickly chopped into chunks)
  • 1 Medium Onion (chopped)
  • 1 teaspoon Mixed Herbs
  • 1 Small Zucinni or Courgette (cut into one inch cubes)
  • 1 Small Aubergine (trimmed and cut into one inch cubes)
  • 1 tin Chopped Tomatoes
  • pinch Salt and Black Pepper (To Taste)
  • 1 tablespoon Red Wine Vinegar (or Balsimic Vinegar)
  • 1 cup Water
  • handful Fresh Basil (Coarsely Chopped)

Directions

Step 1
Heat the oil in a large pan over medium-high heat.
Step 2
Add the garlic, red pepper, onions and mixed herbs, and cook, stirring occasionally, until softened, which should take about approx 6 to 8 minutes.
Step 3
Add the zucchini (or courgette) and aubergine and cook, stirring occasionally, until softened, which should take about 5 minutes.
Step 4
Add the chopped tomatoes, water and salt and pepper to taste.
Step 5
Bring to the boil and then reduce heat to low, cover and simmer, stirring occasionally, for 20 minutes.
Step 6
Uncover and then simmer again, stirring occasionally, until the mixture is thickened, which will take about 15 to 20 minutes more.
Step 7
Remove from the heat and stir in the red wine vinegar or balsamic vinegar. Taste and adjust seasonings.
Step 8
Serve sprinkled with the fresh basil, if desired
