Leftover Cooked Turkey Curry
Ingredients
- 1 handful Cooked Turkey (Roughly chopped and/or cubed/shredded)
- 1 Medium Onion (Chopped)
- 1 Medium Green Pepper (chopped thickly)
- Salt and Black Pepper (To Taste)
- Garam Masala Powder (to taste)
- 1 teaspoon Sugar
- 1 tablespoon Brandy
- carton Single Cream

Directions
Step 1

Head a large frying pan or wok and add a knob of butter |
Step 2

Add the onions until slightly soft then add the green pepper till slightly soft |
Step 3

Add the turkey and stir and cook through for about 5 mins |
Step 4

Then add the curry powder and stir in so that all the ingredients are covered in the curry powder |
Step 5
|
Then add the sugar and salt and pepper to taste |
Step 6
|
Then add the brandy and ignite then add the cream and stir in till cooked through |
Step 7
|
Serve with rice |
Simple Tasty Ratatouille
Ingredients
- 1 teaspoon Extra Virgin Olive Oil
- 1 bulb Garlic (Crushed)
- 1 Large Red Pepper (thickly chopped into chunks)
- 1 Medium Onion (chopped)
- 1 teaspoon Mixed Herbs
- 1 Small Zucinni or Courgette (cut into one inch cubes)
- 1 Small Aubergine (trimmed and cut into one inch cubes)
- 1 tin Chopped Tomatoes
- pinch Salt and Black Pepper (To Taste)
- 1 tablespoon Red Wine Vinegar (or Balsimic Vinegar)
- 1 cup Water
- handful Fresh Basil (Coarsely Chopped)
Directions
Step 1

Heat the oil in a large pan over medium-high heat. |
Step 2

Add the garlic, red pepper, onions and mixed herbs, and cook, stirring occasionally, until softened, which should take about approx 6 to 8 minutes. |
Step 3

Add the zucchini (or courgette) and aubergine and cook, stirring occasionally, until softened, which should take about 5 minutes. |
Step 4
|
Add the chopped tomatoes, water and salt and pepper to taste. |
Step 5

Bring to the boil and then reduce heat to low, cover and simmer, stirring occasionally, for 20 minutes. |
Step 6
|
Uncover and then simmer again, stirring occasionally, until the mixture is thickened, which will take about 15 to 20 minutes more. |
Step 7
|
Remove from the heat and stir in the red wine vinegar or balsamic vinegar. Taste and adjust seasonings. |
Step 8
|
Serve sprinkled with the fresh basil, if desired |
