Luxury Braised Steak with Baby New Potatoes

Ingredients

  • 250g Braising Steak (cubed)
  • 1 Large Onion (sliced)
  • 2 Large Carrots (sliced)
  • 1 bulb Garlic (Crushed)
  • 1 glass Red Wine
  • 1 cube Beef Stock
  • 1 teaspoon Sugar
  • 1 bag Bouquet Garni
  • 1 bag Baby New Potatoes
  • 1 tablespoon Corn Flour
  • Salt and Black Pepper (To Taste)

Directions

Step 1
Preheat the oven to 160C
Step 2
Put the large chunck of beef in a plastic bag with the cornflour, salt and pepper and shake so that the beef is well covered
Step 3
Remove the meat from the bag and seal the meat then remove the meat from the pan and set aside
Step 4
Add the onions, carrots and garlic and stir fry for a few minutes
Step 5
Add the wine
Step 6
Add the beef stock cube and the sugar and bouguet garni
Step 7
Transfer all the ingredients and the meat into a large pot
Step 8
Cook for 1½ hours
Step 9
Remove from the oven and add the baby potatoes give a stir then put back into the ovenfor 45mins
Step 10
After 45mins add the frozen peas and cook for a further 45mins then serve

Ingredients

  • 250g Lamb (cubed)
  • 1 Large Onion (chopped)
  • 2 Large Carrots (sliced)
  • 1 handful Frozen Mixed Peppers
  • 1 tablespoon Corn Flour
  • 1 cube Lamb Stock
  • 3/4 pints Guiness
  • 1 teaspoon Sugar
  • Salt and Black Pepper (To Taste)
  • 1 small bag Baby New Potatoes
  • 1 glass Red Wine
  • 1 handful Frozen Peas

Directions

Step 1
Preheat the oven to 180C
Step 2
Quickly seal the lamb then remove from the pan and set aside
Step 3
Fry the onions, garlic and carrots together for approx 5-10mins
Step 4
Add the mixed frozen mixed peppers to the other ingredients
Step 5
Then add the tablespoon of corn flour to the mixture and at the same time, add a small amount of the tomatoes a little bit at a time until all the tomatoes have been mixed into the ingredients
Step 6
Add the lamb cube, the guiness, sugar, salt and pepper to taste, baby potatoes and red wine
Step 7
Give a good stir then put into the oven for 45mins
Step 8
After 45mins add the frozen peas and cook for a further 45 mins
Step 9
Then serve up and Enjoy!

Red Cabbage with Gammon

Ingredients

  • 2 Medium Onions (Halved and Sliced)
  • 2 Medium Apples (Peeled and Cubed)
  • 100ml Red Wine
  • 4oz Gammon (cut in strips)
  • 4 tablespoons Castor Sugar
  • 100ml Red Wine VInegar
  • 4 Cloves
  • 1 stick Cinnamon (snapped in half)
  • 1 stalk Mace
  • Small amount of black pepper
  • pinch Salt
  • knob Butter (on top of the ingredients)

Directions

Step 1
Put all ingredients in a heatproof earthenware dish cover and put in the oven at 150C and cook for 3½ hours
