Bring a touch of Mexican flavour to your midweek meal with this low-fat, one-pan supper
Ingredients
1 tablespoon Vegetable Oil
1 Medium Onion (Finely Chopped)
3 cloves Garlic (Finely Chopped)
Half teaspoon Dark Brown Sugar
1 teaspoon Dried Chillis
1 tin Chopped Tomatoes
175g Chicken Breasts (cubed)
1 Small Red Onion (Sliced into Rings)
1 handful Coriander Leaves

Step 1
Heat the oil in a medium saucepan.
Step 2
Add the onion and cook for 5 mins or until softened and starting to turn golden, adding the garlic for the final min.
Step 3
Stir in the sugar, dired chillis and tomatoes.
Step 4
Put the chicken into the pan, spoon over the sauce, and simmer gently for 20 mins until the chicken has cooked (add a splash of water if the sauce gets too dry).
Step 5
Remove the chicken from the pan and shred with 2 forks, then stir back into the sauce.
Step 6
Scatter with a little red onion, the coriander, and serve with remaining red onion

1 tablespoon Medium Curry Powder
1 Medium Green Pepper (chopped)
1 Small Chilli (Chopped)
1 cube Lamb Stock
1 tin Chopped Tomatoes
tin Fresh Coriander (To Garnish)

Step 1
Preheat a non-stick pan. Dry fry the red onion and crushed garlic until the onion is lightly browned.
Step 2
Add the lamb and cook until sealed then season with salt and black pepper
Step 3
Add the fresh ginger, garam masala, medium curry powder, green pepper, small chilli and cook mixing well before adding the lamb stock cube and the chopped tomatoes
Step 4
Cover and simmer for 30-35 minutes until the lamb is tender and the sauce reduced

Put minced beef in a bowl

Chop the onion
Step 3
Add the dry ingredients and the onion to the minced beef and mix altogether with your hands so the mixture comes away from bowl like making pastry
Step 4
Flour a board and then make a large ball with the burger ingredients and put on the board then cut into 4 equal parts
Step 5
With a bit of flour in your hands roll each quarter until you have a ball shape then flatten with the palm of your hands until you have a burger shape, about 1/4inch thick
Step 6
Fry with vegetable oil on both sides to whateve taste you like then serve with chunky homemade chips and a side salad
