Vegetarian Chilli Con Carne
Ingredients
- 110g Baby Mushrooms (Finely Chopped)
- 90g Baby Broad Beans
- 1 bulb Garlic (crushed)
- 1 teaspoon Olive Oil
- 1 tin Tomatoes
- 1 Small Onion (Chopped)
- 1 Medium Green Pepper (thinly sliced)
- Half teaspoon Cayenne Pepper
- Half teaspoon Cumin Powder
- Quarter teaspoon Tobasco
- 85g Watercress
Mushroom Hungarian Goulash
Ingredients
- 250g Chestnut Mushrooms (Quartered)
- 1 tin Cherry Tomaoties
- 1 Small Onion (Sliced Thinly)
- 1 Medium Green Pepper (Cut into thin strips)
- 1 bulb Garlic (crushed)
- 1 cube Beef Oxo
- 2 teaspoons Paprika Powder
- 1 tablespoon Tomatoe Puree
- 1 Small Birds Eye Chilli (Lightly Bashed and finely chopped)
- 1 tablespoon Red Wine VInegar

Directions
Step 1

Saute the onion, garlic and green pepper and mushrooms until soft |
Step 2

When soft add the prapika powder and stir in |

Then add in the can of tomatoes, oxo cube, tomatoe puree, birds eye chilli and red wine viengar and mix and stir in and bring to the boil |
Step 4
|
Turn heat down and simmer for one hour stirring occasionally |

- 1/2 head Cabbage (Cored and coarsely chopped)
- 1 tin Chopped Tomatoes

Directions
Step 1

In a large cookware pot, heat olive oil over medium heat |
Step 2

Stir in onion and garlic; cook until onion is transparent, for about 5 minutes. |

Now pour in the water, and add the salt and pepper.
Bring to the boil, then stir in stock cubes and cabbage. |
Step 4

Simmer until the cabbage wilts, which will take about 10 minutes. |

Now stir in the chopped tomatoes and bring to the boil, then turn down the heat and simmer for approx 15 to 30 minutes, stirring often. |
