Ingredients
- 1 Small Onion (Finely Chopped)
- 1 stick Celery (Finely Chopped)
- 1 teaspoon Olive Oil
- 1 Bay Leaf
- 1 cube Vegetable Stock
- 150g Frozen Peas
- 150g Brocolli (cut into little florets)
- 100g Sugar Snap Peas or Mange Tout
- 1 handful Herbs - Mint/Coriander/Parsley
- 2 sticks Spring Onion (Finely Chopped)
- 1 teaspoon Soy Sauce
- Squeeze of Lemon
- Chilli Flakes (to garnish)
- Salt and Black Pepper (to taste)
Note
This makes enough for four and has a calorie count of around 100 calories a portion.
Directions
Step 1

Heat the olive oil then gently sweat the celery and onion |

Once the celery and onion are translucent, add the stock cube and bay leaf and bring to a gentle simmer |

Then add peas, broccoli, and sugar snap peas (or mange tout) and cook for 2-3 minutes until tender |

Remove from the heat and add the herbs, spring onion, soy sauce and lemon juice (plus chilli flakes if using) and stir in |
